Some wines need a nudge: a supplier agreement, a vintage you want to rotate, a gem lost in a cellar of hundreds of references. That's what the sommelier's selection is for — a featured list inside the menu that every guest passes through when choosing.

You can show it as the opening screen — guests see the highlights and jump to the rest via 'View full menu' — or as one more option at the end of the wine-type picker, a less intrusive alternative. Both modes are switched on from the control panel, without touching the tablet.

The effect is the same as a bookshop's front table: it doesn't push, it suggests. And with wine, a good suggestion at the right moment is worth more than any discount.
